Ingredients:
- 2 lbs pork loin, cubed
- 2 large onions, diced
- 4 cloves garlic, minced
- 2 tsp cumin
- 1 tsp paprika
- Salt and pepper, to taste
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 cup frozen peas
- 2 cups cooked rice
- Fresh cilantro, for garnish
Instructions:
- In a large skillet, brown the pork cubes in batches over medium-high heat. Remove and set aside.
- In the same skillet, sauté the onions and garlic until softened.
- Stir in the cumin, paprika, salt, and pepper. Cook for another minute.
- Return the pork to the skillet and add the chicken broth and diced tomatoes. Bring to a simmer.
- Cover and cook on low heat for 1.5 hours, stirring occasionally.
- Add the frozen peas and cook for another 10 minutes.
- Serve the pork casserole over cooked rice and garnish with fresh cilantro.
