Ingredients:

  • 2 lbs pork loin, cubed
  • 2 large onions, diced
  • 4 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup frozen peas
  • 2 cups cooked rice
  • Fresh cilantro, for garnish

Instructions:

  1. In a large skillet, brown the pork cubes in batches over medium-high heat. Remove and set aside.
  2. In the same skillet, sauté the onions and garlic until softened.
  3. Stir in the cumin, paprika, salt, and pepper. Cook for another minute.
  4. Return the pork to the skillet and add the chicken broth and diced tomatoes. Bring to a simmer.
  5. Cover and cook on low heat for 1.5 hours, stirring occasionally.
  6. Add the frozen peas and cook for another 10 minutes.
  7. Serve the pork casserole over cooked rice and garnish with fresh cilantro.
