Ingredients:
- 2 large parsnips, peeled and chopped
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the chopped parsnips with olive oil, oregano, salt, and pepper until well coated.
- Spread the parsnips out on a baking sheet in a single layer.
