Ingredients:
- 4 cups of zucchini, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 teaspoon of ground cinnamon
- Salt and pepper to taste
- 1/2 cup of heavy cream (optional)
Instructions:
Step 1: Saute the Vegetables
- In a large pot, heat some olive oil over medium heat.
- Add the chopped onion and garlic, and saute until translucent.
- Add the chopped zucchini and cook for another 5 minutes.
Step 2: Add the Broth
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for 15-20 minutes, or until the zucchini is tender.
Step 3: Blend the Soup
- Using an immersion blender, blend the soup until smooth.
- Alternatively, you can transfer the soup to a blender and blend in batches.
Step 4: Add the Cinnamon
- Stir in the ground cinnamon and season with salt and pepper to taste.
- If desired, stir in the heavy cream for a creamier consistency.
Step 5: Serve
- Ladle the soup into bowls and garnish with a sprinkle of cinnamon on top.
