Ingredients:

  • 4 cups of zucchini, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 teaspoon of ground cinnamon
  • Salt and pepper to taste
  • 1/2 cup of heavy cream (optional)

Instructions:

Step 1: Saute the Vegetables

  1. In a large pot, heat some olive oil over medium heat.
  2. Add the chopped onion and garlic, and saute until translucent.
  3. Add the chopped zucchini and cook for another 5 minutes.

Step 2: Add the Broth

  1. Pour in the vegetable broth and bring to a boil.
  2. Reduce heat and simmer for 15-20 minutes, or until the zucchini is tender.

Step 3: Blend the Soup

  1. Using an immersion blender, blend the soup until smooth.
  2. Alternatively, you can transfer the soup to a blender and blend in batches.

Step 4: Add the Cinnamon

  1. Stir in the ground cinnamon and season with salt and pepper to taste.
  2. If desired, stir in the heavy cream for a creamier consistency.

Step 5: Serve

  1. Ladle the soup into bowls and garnish with a sprinkle of cinnamon on top.
