Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
- Rinse quinoa under cold water to remove bitterness.
- In a medium saucepan, bring 2 cups of water to a boil.
- Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic, sauté until fragrant.
- Add sliced bell peppers and zucchini, cook until softened.
- Add cooked quinoa to the skillet and mix well.
- Sprinkle dried rosemary on top and season with salt and pepper.
- Cook for an additional 5 minutes, stirring occasionally.
- Serve hot and enjoy!
