Quinoa Stir-fry with Rosemary Recipe

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

  1. Rinse quinoa under cold water to remove bitterness.
  2. In a medium saucepan, bring 2 cups of water to a boil.
  3. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  4. Heat olive oil in a large skillet over medium heat.
  5. Add diced onion and minced garlic, sauté until fragrant.
  6. Add sliced bell peppers and zucchini, cook until softened.
  7. Add cooked quinoa to the skillet and mix well.
  8. Sprinkle dried rosemary on top and season with salt and pepper.
  9. Cook for an additional 5 minutes, stirring occasionally.
  10. Serve hot and enjoy!
