Ingredients:
- 1 cup quinoa
- 2 cups vegetable broth
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
Instructions:
- Preheat oven to 375°F (190°C).
- Rinse quinoa under cold water and drain.
- In a large skillet, heat olive oil over medium heat.
- Add diced onions and peppers, and cook until softened.
- Add minced garlic, paprika, salt, and black pepper, and cook for another minute.
- Add quinoa and vegetable broth to the skillet, and bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes, or until quinoa is cooked.
- Transfer quinoa mixture to a baking dish and sprinkle Parmesan cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
- Serve hot and enjoy!
