Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Rinse quinoa under cold water and drain.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add diced onions and peppers, and cook until softened.
  5. Add minced garlic, paprika, salt, and black pepper, and cook for another minute.
  6. Add quinoa and vegetable broth to the skillet, and bring to a boil.
  7. Reduce heat, cover, and simmer for about 15 minutes, or until quinoa is cooked.
  8. Transfer quinoa mixture to a baking dish and sprinkle Parmesan cheese on top.
  9. Bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  10. Serve hot and enjoy!
