Ingredients:

  • 1 bunch of kale
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions:

  1. Wash and chop the kale into bite-sized pieces, removing the tough stems.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the diced onion and minced garlic, sauté for a few minutes until fragrant.
  4. Add the sliced red bell pepper and cook for another 2-3 minutes.
  5. Toss in the chopped kale and stir-fry for 5-7 minutes until wilted.
  6. Sprinkle the paprika, salt, and pepper over the kale and stir to combine.
