Carrot Bread with Rosemary Recipe

Ingredients:

  • 2 cups grated carrots
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp fresh rosemary, chopped

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine grated carrots, vegetable oil, sugar, eggs, and vanilla extract. Mix well.
  3. In a separate bowl, sift together flour, baking soda, and salt. Add the dry ingredients to the carrot mixture and stir until just combined.
  4. Fold in the chopped rosemary until evenly distributed.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
