Ingredients:
- 2 lbs parsnips, peeled and thinly sliced
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F
- In a bowl, mix together the heavy cream, lemon juice, garlic, salt, and pepper
- Layer half of the parsnip slices in a greased baking dish
- Pour half of the cream mixture over the parsnips
- Sprinkle half of the grated Parmesan cheese on top
- Repeat the layers using the remaining parsnips, cream mixture, and Parmesan cheese
- Cover the dish with foil and bake for 45 minutes
- Remove the foil and bake for an additional 15 minutes, or until the top is golden brown
- Serve hot and enjoy!
