Ingredients:

  • 2 lbs parsnips, peeled and thinly sliced
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F
  2. In a bowl, mix together the heavy cream, lemon juice, garlic, salt, and pepper
  3. Layer half of the parsnip slices in a greased baking dish
  4. Pour half of the cream mixture over the parsnips
  5. Sprinkle half of the grated Parmesan cheese on top
  6. Repeat the layers using the remaining parsnips, cream mixture, and Parmesan cheese
  7. Cover the dish with foil and bake for 45 minutes
  8. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown
  9. Serve hot and enjoy!
