Ingredients:

  • 2 leeks, chopped
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. In a large pot, heat olive oil over medium heat.

  2. Add the chopped leeks, onion, and garlic. Cook until the vegetables are soft, about 5 minutes.
