Ingredients:
- 2 leeks, chopped
- 2 potatoes, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil

In a large pot, heat olive oil over medium heat.
