Ingredients:

  • 1 head of cauliflower
  • 12 oz of pasta
  • 3 cloves of garlic, minced
  • 2 tbsp of olive oil
  • 1/2 tsp of red pepper flakes
  • 1/2 tsp of nutmeg
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions:

  1. Prepare the Cauliflower: Cut the cauliflower into florets and steam until tender, about 10 minutes.
  2. Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Sauté the Garlic: In a skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes and sauté for 1-2 minutes until fragrant.
  4. Add the Cauliflower: Add the steamed cauliflower florets to the skillet and cook for an additional 5 minutes, stirring occasionally.
  5. Season with Nutmeg: Sprinkle the nutmeg over the cauliflower mixture and season with salt and pepper to taste. Stir well to combine.
  6. Combine with Pasta: Add the cooked pasta to the skillet with the cauliflower mixture and toss everything together until well combined.
  7. Serve: Serve the cauliflower pasta hot, garnished with grated Parmesan cheese and a sprinkle of nutmeg.
