Ingredients:
- 2 large parsnips, peeled and shredded
- 1 tablespoon fresh ginger, grated
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
- 2 tablespoons sesame seeds
- 1/4 cup fresh cilantro, chopped
Instructions:
- In a large bowl, combine the shredded parsnips and grated ginger.
- In a separate small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the parsnips and ginger, and toss to combine.
- Sprinkle sesame seeds and chopped cilantro over the salad and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
