Parsnip Salad with Ginger Recipe

Ingredients:

  • 2 large parsnips, peeled and shredded
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste
  • 2 tablespoons sesame seeds
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. In a large bowl, combine the shredded parsnips and grated ginger.
  2. In a separate small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
  3. Pour the dressing over the parsnips and ginger, and toss to combine.
  4. Sprinkle sesame seeds and chopped cilantro over the salad and mix well.
  5. Chill in the refrigerator for at least 30 minutes before serving.
