Ingredients:

  • 2 sweet potatoes, peeled and cubed
  • 8 oz pasta of your choice
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/2 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Grated parmesan cheese for topping

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, toss sweet potato cubes with 2 tablespoons of olive oil, salt, and pepper. Roast in the oven for 20-25 minutes or until tender.
  3. Cook pasta according to package instructions. Drain and set aside.
  4. In a large skillet, heat the remaining olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  5. Stir in the roasted sweet potatoes and chopped basil leaves. Cook for an additional 2-3 minutes to allow flavors to meld.
  6. Add cooked pasta to the skillet and toss to combine. Season with salt and pepper to taste.
  7. Divide pasta into bowls and top with grated parmesan cheese. Serve hot and enjoy!
