Ingredients:
- 2 sweet potatoes, peeled and cubed
- 8 oz pasta of your choice
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/2 cup fresh basil leaves, chopped
- Salt and pepper to taste
- Grated parmesan cheese for topping
Instructions:
- Preheat oven to 400°F (200°C).
- In a baking dish, toss sweet potato cubes with 2 tablespoons of olive oil, salt, and pepper. Roast in the oven for 20-25 minutes or until tender.
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the remaining olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
- Stir in the roasted sweet potatoes and chopped basil leaves. Cook for an additional 2-3 minutes to allow flavors to meld.
- Add cooked pasta to the skillet and toss to combine. Season with salt and pepper to taste.
- Divide pasta into bowls and top with grated parmesan cheese. Serve hot and enjoy!
