Ingredients:

  • 1 cup of lentils
  • 2 cups of water
  • 1 tablespoon of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender.
  2. In a separate pan, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  3. Add minced garlic and dried thyme to the pan with onions. Cook for an additional 2-3 minutes.
  4. Once lentils are cooked, drain any excess water and add them to the pan with the onion mixture. Stir to combine.
  5. Season with salt and pepper to taste.
  6. Serve the lentil bowl hot, garnished with fresh thyme leaves if desired.
