Ingredients:
- 1 cup of lentils
- 2 cups of water
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions:
- In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender.
- In a separate pan, heat olive oil over medium heat. Add chopped onion and cook until translucent.
- Add minced garlic and dried thyme to the pan with onions. Cook for an additional 2-3 minutes.
- Once lentils are cooked, drain any excess water and add them to the pan with the onion mixture. Stir to combine.
- Season with salt and pepper to taste.
- Serve the lentil bowl hot, garnished with fresh thyme leaves if desired.
