Ingredients:

  • 2 acorn squash, halved and seeds removed
  • 1/4 cup honey
  • 1/4 cup butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup chopped pecans

Instructions:

  1. Preheat oven to 375°F.
  2. Place acorn squash halves cut side down on a baking sheet, and bake for 30 minutes.
  3. Remove squash from oven and flip over. In a small bowl, mix honey, melted butter, salt, cinnamon, and nutmeg.
  4. Brush honey mixture over the cut sides of the squash and sprinkle with chopped pecans.
  5. Return squash to the oven and bake for an additional 20-25 minutes, or until tender.
  6. Serve warm and enjoy!
