Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can of black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp cinnamon
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions:

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a large skillet, sauté the onion and bell pepper until softened.
  3. Add the garlic, cumin, and cinnamon to the skillet and cook for another minute.
  4. Add the quinoa, vegetable broth, black beans, corn, salt, and pepper to the skillet. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for about 15-20 minutes, or until the quinoa is cooked.
  6. Preheat the oven to 375°F (190°C).
  7. Transfer the quinoa mixture to a baking dish and sprinkle with shredded cheese, if desired.
  8. Bake in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
  9. Serve hot and enjoy!
