Ingredients:
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can of black beans, drained and rinsed
- 1 cup frozen corn
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp cinnamon
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions:
- Rinse the quinoa under cold water to remove any bitterness.
- In a large skillet, sauté the onion and bell pepper until softened.
- Add the garlic, cumin, and cinnamon to the skillet and cook for another minute.
- Add the quinoa, vegetable broth, black beans, corn, salt, and pepper to the skillet. Stir to combine.
- Bring the mixture to a boil, then reduce heat and let it simmer for about 15-20 minutes, or until the quinoa is cooked.
- Preheat the oven to 375°F (190°C).
- Transfer the quinoa mixture to a baking dish and sprinkle with shredded cheese, if desired.
- Bake in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
