Butternut Squash Stuffing with Maple Syrup

Ingredients:

  • 1 butternut squash, peeled and cubed
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of bread crumbs
  • 1/4 cup of maple syrup
  • 1/2 cup of vegetable broth
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the onions and garlic, and cook until they are soft and translucent.
  4. Add the butternut squash and cook until it is slightly browned.
  5. Transfer the mixture to a baking dish.
  6. In a small bowl, mix together the bread crumbs, maple syrup, vegetable broth, salt, and pepper.
  7. Pour the mixture over the butternut squash and stir to combine.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.
  10. Serve warm and enjoy!
