Butternut Squash Stuffing with Maple Syrup
Ingredients:
- 1 butternut squash, peeled and cubed
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup of bread crumbs
- 1/4 cup of maple syrup
- 1/2 cup of vegetable broth
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F.
- In a large skillet, heat the olive oil over medium heat.
- Add the onions and garlic, and cook until they are soft and translucent.
- Add the butternut squash and cook until it is slightly browned.
- Transfer the mixture to a baking dish.
- In a small bowl, mix together the bread crumbs, maple syrup, vegetable broth, salt, and pepper.
- Pour the mixture over the butternut squash and stir to combine.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.
- Serve warm and enjoy!
