Quinoa Risotto with Basil Recipe
Ingredients:
- 1 cup quinoa
- 2 cups vegetable broth
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- Salt and pepper to taste
Instructions:
Step 1: Cook the Quinoa
In a saucepan, bring the vegetable broth to a simmer. Add the quinoa and reduce heat to low. Cover and cook for 15-20 minutes, or until the quinoa is tender.
Step 2: Saute the Onion and Garlic
In a separate large pan, saute the chopped onion and minced garlic in olive oil until translucent.
Step 3: Combine the Quinoa
Add the cooked quinoa to the pan with the onion and garlic. Stir to combine.
Step 4: Add the Parmesan and Basil
Stir in the grated Parmesan cheese and chopped fresh basil. Season with salt and pepper to taste.
Step 5: Serve
Remove from heat and serve the quinoa risotto with basil hot. Enjoy!
