Ingredients

  • 2 cups of fresh cranberries
  • 1 tablespoon of olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • 1 teaspoon of vanilla extract

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and garlic, sauté until fragrant.
  3. Add cranberries, thyme, salt, and pepper to the skillet.
  4. Cook for 5-7 minutes, stirring occasionally, until cranberries start to pop.
  5. Remove from heat and stir in vanilla extract.
  6. Serve hot as a side dish with your favorite protein.
