Ingredients:

  • 1 sheet of puff pastry
  • 2 cups of fresh spinach
  • 1 red bell pepper, chopped
  • 1 small onion, chopped
  • 1 clove of garlic, minced
  • 1/2 cup of feta cheese, crumbled
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the puff pastry sheet on a baking dish and poke holes in the bottom with a fork. Bake for 10 minutes.
  3. In a skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.
  4. Add the spinach and pepper to the skillet and cook until the spinach is wilted.
  5. Season with salt and pepper, then remove from heat.
  6. Spoon the spinach mixture onto the puff pastry, then sprinkle the feta cheese on top.
  7. Bake for another 15-20 minutes, or until the pastry is golden brown and the cheese is melted.
  8. Serve hot and enjoy!
