Ingredients:
- 1 sheet of puff pastry
- 2 cups of fresh spinach
- 1 red bell pepper, chopped
- 1 small onion, chopped
- 1 clove of garlic, minced
- 1/2 cup of feta cheese, crumbled
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of olive oil
Instructions:
- Preheat your oven to 375°F (190°C).
- Roll out the puff pastry sheet on a baking dish and poke holes in the bottom with a fork. Bake for 10 minutes.
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.
- Add the spinach and pepper to the skillet and cook until the spinach is wilted.
- Season with salt and pepper, then remove from heat.
- Spoon the spinach mixture onto the puff pastry, then sprinkle the feta cheese on top.
- Bake for another 15-20 minutes, or until the pastry is golden brown and the cheese is melted.
- Serve hot and enjoy!
