Ingredients:

  • 1 cup wild rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Instructions:

  1. Rinse the wild rice: Place the wild rice in a fine mesh strainer and rinse under cold water until the water runs clear.
  2. Cook the wild rice: In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed wild rice, reduce heat to low, cover, and simmer for 45-50 minutes, or until the rice is tender and has absorbed all the liquid.
  3. Saute the aromatics: In a separate skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  4. Combine the ingredients: Once the wild rice is cooked, add it to the skillet with the sautéed onions and garlic. Stir in the fresh thyme leaves and season with salt and pepper to taste.
  5. Serve: Transfer the wild rice pilaf to a serving dish and garnish with additional thyme leaves, if desired. Serve hot as a side dish or enjoy on its own as a light meal.
