Acorn Squash Stir-fry with Nutmeg Recipe

Ingredients:

  • 1 acorn squash, peeled and diced
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground nutmeg
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the onion and garlic, and sauté until fragrant, about 2 minutes.
  3. Add the diced acorn squash to the skillet and stir-fry for about 5 minutes, until the squash begins to soften.
  4. Sprinkle the ground nutmeg over the squash and season with salt and pepper.
  5. Continue to stir-fry for another 5-7 minutes, until the squash is tender but still slightly firm.
  6. Remove from heat and serve hot.
