Ingredients:
- 1 acorn squash, peeled and diced
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground nutmeg
- Salt and pepper to taste
Instructions:
- In a large skillet, heat the vegetable oil over medium heat.
- Add the onion and garlic, and sauté until fragrant, about 2 minutes.
- Add the diced acorn squash to the skillet and stir-fry for about 5 minutes, until the squash begins to soften.
- Sprinkle the ground nutmeg over the squash and season with salt and pepper.
- Continue to stir-fry for another 5-7 minutes, until the squash is tender but still slightly firm.
- Remove from heat and serve hot.
