Ingredients:
- 1 lb Brussels sprouts, trimmed and halved
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 tbsp olive oil
- 2 tbsp honey
- Salt and pepper to taste
Instructions:
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until softened.
- Add Brussels sprouts and vegetable broth, bring to a boil.
- Reduce heat and simmer for 20 minutes, or until Brussels sprouts are tender.
- Using an immersion blender, blend soup until smooth.
- Stir in honey and season with salt and pepper.
- Serve hot and enjoy!
