Brussels Sprouts Soup with Honey Recipe

Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 2 tbsp honey
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add Brussels sprouts and vegetable broth, bring to a boil.
  4. Reduce heat and simmer for 20 minutes, or until Brussels sprouts are tender.
  5. Using an immersion blender, blend soup until smooth.
  6. Stir in honey and season with salt and pepper.
  7. Serve hot and enjoy!
