Ingredients:

  • 2 large parsnips, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the parsnips with olive oil, nutmeg, salt, and pepper until well coated.
  3. Spread the parsnips out on a baking sheet in a single layer.
  4. Roast in the preheated oven for 30-40 minutes, flipping halfway through, until the parsnips are tender and golden brown.
  5. Remove from the oven and serve hot.
