Ingredients:
- 2 large parsnips, peeled and cut into chunks
- 2 tablespoons olive oil
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the parsnips with olive oil, nutmeg, salt, and pepper until well coated.
- Spread the parsnips out on a baking sheet in a single layer.
- Roast in the preheated oven for 30-40 minutes, flipping halfway through, until the parsnips are tender and golden brown.
- Remove from the oven and serve hot.
