Lentil Soup with Chili Flakes Recipe

Ingredients:

  • 1 cup dried lentils
  • 1 onion, diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 teaspoon chili flakes
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat some olive oil over medium heat.
  2. Add the diced onion, chopped carrots, and celery. Cook until the vegetables are soft, about 5 minutes.
  3. Add the dried lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for 20-25 minutes, or until lentils are tender.
  4. Season with chili flakes, salt, and pepper to taste.
  5. Serve hot and enjoy!
