Carrot Stuffing with Maple Syrup

Ingredients:

  • 1 pound carrots, peeled and grated
  • 1 cup breadcrumbs
  • 1/2 cup diced onions
  • 1/4 cup chopped parsley
  • 1/4 cup maple syrup
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, melt the butter over medium heat.
  2. Add the diced onions and cook until softened, about 5 minutes.
  3. Stir in the grated carrots and cook for another 5 minutes.
  4. Add the breadcrumbs and mix well to combine.
  5. Pour in the maple syrup and season with salt and pepper.
  6. Cook for an additional 2-3 minutes, stirring frequently.
  7. Remove from heat and stir in chopped parsley.
  8. Serve hot as a delicious side dish or stuffing for poultry.
