Ingredients
- 1 cup wild rice
- 2 cups chicken broth
- 1 onion, chopped
- 1 bell pepper, diced
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- In a saucepan, combine the wild rice and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Meanwhile, in a skillet, heat olive oil over medium heat. Add the onion, bell pepper, and garlic. Cook until vegetables are tender.
- Add the cooked wild rice to the skillet with the vegetables. Stir in paprika, salt, and pepper.
- Transfer the mixture to a casserole dish and sprinkle with Parmesan cheese.
- Bake at 350°F for 20 minutes, or until the cheese is melted and bubbly.
