Ingredients

  • 1 cup wild rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a saucepan, combine the wild rice and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  2. Meanwhile, in a skillet, heat olive oil over medium heat. Add the onion, bell pepper, and garlic. Cook until vegetables are tender.
  3. Add the cooked wild rice to the skillet with the vegetables. Stir in paprika, salt, and pepper.
  4. Transfer the mixture to a casserole dish and sprinkle with Parmesan cheese.
  5. Bake at 350°F for 20 minutes, or until the cheese is melted and bubbly.
