Ingredients:
- 2 lbs parsnips, peeled and sliced
- 3 tbsp olive oil
- 1 tsp ground nutmeg
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F.
- Place the parsnips in a large mixing bowl.
- Add the olive oil, nutmeg, salt, and pepper to the bowl.
- Toss everything together until the parsnips are well coated.
- Spread the parsnips out on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, turning halfway through, until the parsnips are tender and golden brown.
- Remove from the oven and serve hot.
