Ingredients:

  • 2 lbs parsnips, peeled and sliced
  • 3 tbsp olive oil
  • 1 tsp ground nutmeg
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F.
  2. Place the parsnips in a large mixing bowl.
  3. Add the olive oil, nutmeg, salt, and pepper to the bowl.
  4. Toss everything together until the parsnips are well coated.
  5. Spread the parsnips out on a baking sheet in a single layer.
  6. Roast in the oven for 25-30 minutes, turning halfway through, until the parsnips are tender and golden brown.
  7. Remove from the oven and serve hot.
