Lentil Soup with Chili Flakes
Ingredients:
- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon chili flakes
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil
Instructions:
- Heat a large pot over medium heat and add olive oil.
- Add chopped onion, carrots, celery, and garlic. Cook until vegetables are soft, about 5 minutes.
- Stir in chili flakes and cumin, cook for another minute.
- Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 30 minutes or until lentils are tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
