Lentil Soup with Chili Flakes

Ingredients:

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon chili flakes
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Heat a large pot over medium heat and add olive oil.
  2. Add chopped onion, carrots, celery, and garlic. Cook until vegetables are soft, about 5 minutes.
  3. Stir in chili flakes and cumin, cook for another minute.
  4. Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 30 minutes or until lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
