Ingredients:
- 9 lasagna noodles
- 2 cups tomato sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup chopped spinach
- 1 cup sliced mushrooms
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
1. Preheat the oven:
Preheat your oven to 375°F (190°C).
2. Cook the lasagna noodles:
Bring a large pot of water to a boil. Add the lasagna noodles and cook according to package instructions. Drain and set aside.
3. Prepare the vegetable filling:
In a skillet, heat the olive oil over medium heat. Add the garlic, spinach, and mushrooms. Sauté until the vegetables are tender, about 5 minutes. Season with salt, pepper, and oregano. Remove from heat and set aside.
4. Assemble the lasagna:
Spread a thin layer of tomato sauce on the bottom of a baking dish. Place a layer of lasagna noodles on top. Spread a layer of ricotta cheese, followed by a layer of the vegetable filling and a layer of mozzarella cheese. Repeat the layers until all ingredients are used, ending with a layer of tomato sauce on top. Sprinkle with parmesan cheese.
5. Bake the lasagna:
Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
6. Serve:
