Ingredients:
- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 4 slices bacon, cooked and crumbled
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F.
- Scrub the potatoes well and pat them dry.
- Pierce each potato several times with a fork to allow steam to escape.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.
- Remove the potatoes from the oven and let them cool slightly.
- Cut each potato in half and scoop out the flesh into a bowl, leaving a thin shell.
- Mash the potato flesh with sour cream, cheddar cheese, green onions, bacon, salt, and pepper.
- Spoon the mixture back into the potato shells and sprinkle with additional cheese.
- Return the potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy your loaded baked potatoes!
