Ingredients:

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 4 slices bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. Scrub the potatoes well and pat them dry.
  3. Pierce each potato several times with a fork to allow steam to escape.
  4. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.
  5. Remove the potatoes from the oven and let them cool slightly.
  6. Cut each potato in half and scoop out the flesh into a bowl, leaving a thin shell.
  7. Mash the potato flesh with sour cream, cheddar cheese, green onions, bacon, salt, and pepper.
  8. Spoon the mixture back into the potato shells and sprinkle with additional cheese.
  9. Return the potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Serve hot and enjoy your loaded baked potatoes!
