Ingredients:
- 2 eggplants
- 1 cup of breadcrumbs
- 1 cup of grated Parmesan cheese
- 2 eggs
- 2 cups of marinara sauce
- 1 cup of shredded mozzarella cheese
- 1/4 cup of olive oil

Instructions:
1. Preheat the oven
Preheat your oven to 375°F (190°C).
2. Prepare the eggplant
Peel the eggplants and slice them into 1/4 inch rounds. Sprinkle salt over the eggplant slices and let them sit for 10 minutes to draw out excess moisture. Pat them dry with a paper towel.
3. Bread the eggplant
- In one bowl, beat the eggs.
- In another bowl, combine breadcrumbs, grated Parmesan cheese, salt, and pepper.
- Dip each eggplant slice into the beaten eggs, then coat them in the breadcrumb mixture.
4. Bake the eggplant
- Place the breaded eggplant slices on a baking sheet and drizzle with olive oil.
- Bake in the preheated oven for 20 minutes until golden brown and crispy.
5. Assemble the Eggplant Parmesan
- In a baking dish, spread a thin layer of marinara sauce on the bottom.
- Layer half of the baked eggplant slices on top of the sauce.
- Add another layer of marinara sauce and sprinkle with shredded mozzarella cheese.
- Repeat the layers with the remaining eggplant slices, marinara sauce, and mozzarella cheese.
6. Bake the Eggplant Parmesan
- Cover the baking dish with foil and bake in the oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
