Ingredients:

  • 1 box of lasagna noodles
  • 2 cups of marinara sauce
  • 1 pound of ricotta cheese
  • 1 cup of grated mozzarella cheese
  • 1 cup of grated Parmesan cheese
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Boil the lasagna noodles according to package instructions, then drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté the garlic, onion, zucchini, yellow squash, and red bell pepper until softened. Season with salt and pepper.
  4. In a mixing bowl, combine the ricotta, mozzarella, and Parmesan cheeses.
  5. Spread a thin layer of marinara sauce on the bottom of a casserole dish.
  6. Layer lasagna noodles on top of the sauce, followed by a layer of the cheese mixture and sautéed vegetables. Repeat until all ingredients are used, finishing with a layer of sauce on top.
  7. Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  8. Let the lasagna cool for a few minutes before serving. Enjoy!
