Eggplant Parmesan Recipe

Ingredients:

  • 2 large eggplants
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 eggs
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F.
  2. Peel and slice the eggplants into 1/4 inch thick rounds.
  3. In a shallow bowl, beat the eggs.
  4. In another bowl, mix breadcrumbs, Parmesan cheese, salt, and pepper.
  5. Dip eggplant slices in egg mixture, then coat with breadcrumb mixture.
  6. Heat olive oil in a skillet over medium heat and fry eggplant slices until golden brown on both sides.
  7. In a baking dish, layer marinara sauce, fried eggplant slices, and mozzarella cheese.
  8. Repeat layers until all ingredients are used, ending with a layer of mozzarella cheese on top.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  10. Let cool slightly before serving.
