Ingredients:
- 2 large eggplants
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 2 eggs
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F.
- Peel and slice the eggplants into 1/4 inch thick rounds.
- In a shallow bowl, beat the eggs.
- In another bowl, mix breadcrumbs, Parmesan cheese, salt, and pepper.
- Dip eggplant slices in egg mixture, then coat with breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and fry eggplant slices until golden brown on both sides.
- In a baking dish, layer marinara sauce, fried eggplant slices, and mozzarella cheese.
- Repeat layers until all ingredients are used, ending with a layer of mozzarella cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Let cool slightly before serving.
