Vegetarian Chili Recipe

Ingredients:

  • 1 can of black beans, drained and rinsed
  • 1 can of kidney beans, drained and rinsed
  • 1 can of diced tomatoes
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of chili powder
  • 1 tablespoon of cumin
  • Salt and pepper to taste
  • Optional toppings: avocado, shredded cheese, sour cream, cilantro

Instructions:

  1. In a large pot, sauté the onion and bell pepper in olive oil over medium heat until softened.
  2. Add the garlic, chili powder, and cumin, and cook for another minute until fragrant.
  3. Stir in the black beans, kidney beans, diced tomatoes, and salt and pepper. Bring to a simmer.
  4. Cover and let the chili simmer for 20-30 minutes, stirring occasionally.
  5. Adjust seasoning to taste and serve hot with optional toppings.
