Ingredients:
- 1 can of black beans, drained and rinsed
- 1 can of kidney beans, drained and rinsed
- 1 can of diced tomatoes
- 1 green bell pepper, chopped
- 1 red onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of chili powder
- 1 tablespoon of cumin
- Salt and pepper to taste
- Optional toppings: avocado, shredded cheese, sour cream, cilantro
Instructions:
- In a large pot, sauté the onion and bell pepper in olive oil over medium heat until softened.
- Add the garlic, chili powder, and cumin, and cook for another minute until fragrant.
- Stir in the black beans, kidney beans, diced tomatoes, and salt and pepper. Bring to a simmer.
- Cover and let the chili simmer for 20-30 minutes, stirring occasionally.
- Adjust seasoning to taste and serve hot with optional toppings.
