Ingredients
- 5 large onions, thinly sliced
- 4 tbsp butter
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 6 cups beef broth
- 1 cup red wine
- 1 bay leaf
- 1 tsp thyme
- Salt and pepper to taste
- French baguette, sliced
- Gruyere cheese, grated
Instructions
- In a large pot, melt the butter and olive oil over medium heat.
- Add the sliced onions and garlic, and cook until caramelized, about 30 minutes.
- Pour in the beef broth, red wine, bay leaf, thyme, salt, and pepper. Simmer for 30 minutes.
- Preheat the broiler. Ladle the soup into oven-safe bowls.
- Top each bowl with a slice of French baguette and sprinkle with grated Gruyere cheese.
- Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
- Serve hot and enjoy!
