Thai Green Curry Recipe

Ingredients:

  • 1 lb chicken, sliced
  • 2 tbsp green curry paste
  • 1 can coconut milk
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp vegetable oil
  • Fresh basil leaves, for garnish

Instructions:

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add green curry paste and cook for 1-2 minutes.
  3. Add chicken and stir until cooked through.
  4. Pour in coconut milk and bring to a simmer.
  5. Add red bell pepper and broccoli, and let simmer for 10 minutes.
  6. Stir in fish sauce and sugar, adjusting to taste.
  7. Serve hot over rice and garnish with fresh basil leaves.
