Ingredients:
- 1 red bell pepper, chopped into large chunks
- 1 yellow bell pepper, chopped into large chunks
- 1 zucchini, sliced into rounds
- 1 red onion, cut into wedges
- 8 cherry tomatoes
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- Preheat the grill to medium-high heat.
- In a small bowl, mix together olive oil, garlic, oregano, salt, and pepper.
- Thread the veggies onto skewers, alternating between the different vegetables.
- Brush the skewers with the olive oil mixture.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the veggies are tender and slightly charred.
- Remove the skewers from the grill and serve hot.
