Ingredients:

  • 1 red bell pepper, chopped into large chunks
  • 1 yellow bell pepper, chopped into large chunks
  • 1 zucchini, sliced into rounds
  • 1 red onion, cut into wedges
  • 8 cherry tomatoes
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix together olive oil, garlic, oregano, salt, and pepper.
  3. Thread the veggies onto skewers, alternating between the different vegetables.
  4. Brush the skewers with the olive oil mixture.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the veggies are tender and slightly charred.
  6. Remove the skewers from the grill and serve hot.
