Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 can coconut milk
- 1 red bell pepper, sliced
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add chopped onions and garlic, sauté until translucent.
- Season chicken breasts with salt, pepper, and curry powder.
- Add chicken to the skillet and cook until browned on both sides.
- Pour in the coconut milk and add sliced bell pepper.
- Simmer for 15-20 minutes or until chicken is cooked through.
- Serve the Poulet au curry hot over rice or with crusty bread.
