Paella Recipe

Ingredients:

  • 2 cups of Bomba rice
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of peas
  • 1 cup of diced tomatoes
  • 1/2 teaspoon of saffron threads
  • 1 teaspoon of smoked paprika
  • 1 pound of chicken thighs, diced
  • 1/2 pound of chorizo sausage, sliced
  • 1 pound of shrimp, peeled and deveined
  • Salt and pepper to taste
  • 4 cups of chicken broth
  • Olive oil for cooking
  • Lemon wedges for garnish

Instructions:

1. Prep the Ingredients

Start by prepping all the ingredients as listed above.

2. Cook the Chicken and Chorizo

In a large paella pan, heat some olive oil over medium heat. Add the chicken and chorizo, and cook until browned. Remove from the pan and set aside.

3. Saute the Vegetables

In the same pan, saute the onion, garlic, and bell peppers until they start to soften.

4. Add the Rice and Spices

Stir in the rice, saffron, and paprika, making sure the rice is well coated with the spices.

5. Add the Liquid

Pour in the chicken broth and diced tomatoes. Bring to a simmer and let cook for about 10 minutes.

6. Add the Protein

Stir in the cooked chicken and chorizo, along with the shrimp and peas. Cook for another 10 minutes, or until the shrimp is pink and cooked through.

7. Serve

Once everything is cooked through and the rice is tender, remove from heat and let sit for a few minutes. Serve hot with lemon wedges on the side.
