Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup cold water
  • 1 cup brown sugar
  • 1/2 cup corn syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup melted butter
  • 1/2 cup raisins or pecans (optional)

Instructions:

  1. Prepare Crust:
  2. In a mixing bowl, combine flour and cubed butter. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
  3. Add water gradually, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Roll out the dough on a floured surface and cut into circles to fit a muffin tin.
  5. Make Filling:
  6. In a bowl, whisk together brown sugar, corn syrup, eggs, vanilla, and melted butter until well combined.
  7. Add raisins or pecans if desired.
  8. Assemble Butter Tarts:
  9. Preheat oven to 375°F (190°C).
  10. Fill each pastry crust with the filling mixture, about 3/4 full.
  11. Bake for 15-20 minutes or until the filling is set and the crust is golden brown.
  12. Let cool before serving.
