Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup cold water
- 1 cup brown sugar
- 1/2 cup corn syrup
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup melted butter
- 1/2 cup raisins or pecans (optional)
Instructions:
- Prepare Crust:
- In a mixing bowl, combine flour and cubed butter. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
- Add water gradually, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Roll out the dough on a floured surface and cut into circles to fit a muffin tin.
- Make Filling:
- In a bowl, whisk together brown sugar, corn syrup, eggs, vanilla, and melted butter until well combined.
- Add raisins or pecans if desired.
- Assemble Butter Tarts:
- Preheat oven to 375°F (190°C).
- Fill each pastry crust with the filling mixture, about 3/4 full.
- Bake for 15-20 minutes or until the filling is set and the crust is golden brown.
- Let cool before serving.
