Nanaimo Bars Recipe

Ingredients:

  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 5 tbsp cocoa powder
  • 1 large egg, beaten
  • 1 3/4 cups graham cracker crumbs
  • 1 cup shredded coconut
  • 1/2 cup chopped walnuts
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp vanilla custard powder
  • 4-6 tbsp milk
  • 1 cup semisweet chocolate chips
  • 2 tbsp unsalted butter

Instructions:

  1. Base Layer: In a medium bowl, mix together melted butter, sugar, cocoa powder, and beaten egg. Stir in graham cracker crumbs, coconut, and walnuts until well combined. Press mixture into the bottom of a greased 9×9 inch baking pan.
  2. Second Layer: In a separate bowl, cream together softened butter, powdered sugar, and vanilla custard powder. Add milk, 1 tablespoon at a time, until mixture is smooth. Spread over the base layer in the pan.
  3. Top Layer: In a small saucepan, melt chocolate chips and 2 tablespoons of butter over low heat, stirring constantly. Once melted, pour over the second layer in the pan and spread evenly.
  4. Chill in the refrigerator for at least 2 hours, or until set. Cut into squares and enjoy!
