Split Pea Soup Recipe
Ingredients
- 1 pound dried split peas
- 1 ham hock or ham bone
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 8 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- Rinse the split peas under cold water, then soak them in a bowl with enough water to cover them for at least 1 hour.
- In a large soup pot, heat some oil over medium heat and add the chopped onion, carrots, celery, and garlic. Cook until the vegetables are softened.
- Add the ham hock or ham bone to the pot, along with the soaked split peas and broth. Bring to a boil, then reduce heat and simmer for about 1 hour, stirring occasionally.
- Remove the ham hock or bone from the soup and discard. Use an immersion blender to partially blend the soup to your desired consistency.
- Season with salt and pepper to taste. Serve hot and enjoy!
