Split Pea Soup Recipe

Ingredients

  • 1 pound dried split peas
  • 1 ham hock or ham bone
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas under cold water, then soak them in a bowl with enough water to cover them for at least 1 hour.
  2. In a large soup pot, heat some oil over medium heat and add the chopped onion, carrots, celery, and garlic. Cook until the vegetables are softened.
  3. Add the ham hock or ham bone to the pot, along with the soaked split peas and broth. Bring to a boil, then reduce heat and simmer for about 1 hour, stirring occasionally.
  4. Remove the ham hock or bone from the soup and discard. Use an immersion blender to partially blend the soup to your desired consistency.
  5. Season with salt and pepper to taste. Serve hot and enjoy!
