Ingredients:
- 2 large carrots, shredded
- 1 tablespoon grated ginger
- 1/4 cup thinly sliced red cabbage
- 1/4 cup shredded carrots
- 1/4 cup sliced cucumber
- 1/4 cup chopped fresh cilantro
- 4 large whole wheat tortillas
- 1/4 cup hummus
- Salt and pepper to taste
Instructions:
- In a bowl, mix the shredded carrots and ginger together
- Spread a tablespoon of hummus on each tortilla
- Evenly distribute the carrot and ginger mixture, red cabbage, shredded carrots, cucumber, and cilantro over the tortillas
- Season with salt and pepper
- Roll up the tortillas, tucking in the sides as you go
