Ingredients:
- 1 cup quinoa
- 2 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 1 carrot, chopped
- 1/2 cup dried cranberries
- 1/4 cup chopped fresh thyme
- Salt and pepper to taste
Instructions:
Step 1: Rinse the quinoa under cold water to remove any bitterness.
Step 2: In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat, cover, and simmer for 15-20 minutes or until all the liquid is absorbed.
Step 3: In a separate pan, sauté the onion, garlic, celery, and carrot until softened.
Step 4: Once the quinoa is cooked, fluff it with a fork and transfer it to a large bowl. Add the sautéed vegetables, dried cranberries, fresh thyme, salt, and pepper. Mix well to combine all the ingredients.
Step 5: Serve the quinoa stuffing warm as a delicious and healthy side dish for your next meal!
