Ingredients:

  • 2 sweet potatoes
  • 2 tablespoons honey
  • 1/4 cup chopped pecans
  • 1/4 cup dried cranberries
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions:

  1. Preheat oven to 400°F.
  2. Wash and scrub sweet potatoes. Pierce with a fork and place on a baking sheet.
  3. Bake sweet potatoes for 45-50 minutes, or until tender.
  4. While sweet potatoes are baking, mix honey, chopped pecans, dried cranberries, cinnamon, and salt in a bowl.
  5. Once sweet potatoes are cooked, slice each one in half lengthwise.
  6. Fill each sweet potato half with the honey mixture.
  7. Return filled sweet potatoes to the oven and bake for an additional 10 minutes.
  8. Serve hot and enjoy!
