Ingredients:
- 2 sweet potatoes
- 2 tablespoons honey
- 1/4 cup chopped pecans
- 1/4 cup dried cranberries
- 1/4 teaspoon cinnamon
- Pinch of salt
Instructions:
- Preheat oven to 400°F.
- Wash and scrub sweet potatoes. Pierce with a fork and place on a baking sheet.
- Bake sweet potatoes for 45-50 minutes, or until tender.
- While sweet potatoes are baking, mix honey, chopped pecans, dried cranberries, cinnamon, and salt in a bowl.
- Once sweet potatoes are cooked, slice each one in half lengthwise.
- Fill each sweet potato half with the honey mixture.
- Return filled sweet potatoes to the oven and bake for an additional 10 minutes.
- Serve hot and enjoy!
