Ingredients:
- 4 cups of shredded carrots
- 1/4 cup of maple syrup
- 1/4 cup of butter, melted
- 1/2 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- 1/4 cup of chopped pecans
- 1/4 cup of dried cranberries
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded carrots, maple syrup, melted butter, cinnamon, and nutmeg. Mix well to coat the carrots evenly.
- Transfer the carrot mixture to a greased baking dish and spread it out evenly.
- Sprinkle the chopped pecans and dried cranberries on top of the carrot mixture.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the carrots are tender and the top is slightly caramelized.
- Remove from the oven and let it cool for a few minutes before serving.
