Carrot Bake with Maple Syrup

Ingredients:

  • 4 cups of shredded carrots
  • 1/4 cup of maple syrup
  • 1/4 cup of butter, melted
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1/4 cup of chopped pecans
  • 1/4 cup of dried cranberries

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded carrots, maple syrup, melted butter, cinnamon, and nutmeg. Mix well to coat the carrots evenly.
  3. Transfer the carrot mixture to a greased baking dish and spread it out evenly.
  4. Sprinkle the chopped pecans and dried cranberries on top of the carrot mixture.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the carrots are tender and the top is slightly caramelized.
  7. Remove from the oven and let it cool for a few minutes before serving.
