Ingredients:

  • 4 medium zucchinis, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried rosemary
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened.
  3. Add the sliced zucchinis to the skillet, stirring occasionally until they are slightly tender.
  4. Sprinkle the dried rosemary, salt, and pepper over the zucchini mixture and stir to combine.
  5. Transfer the zucchini mixture to a greased casserole dish and top with grated Parmesan cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool slightly before serving.
