Ingredients:
- 500g leeks, chopped
- 2 tbsp olive oil
- 3 eggs
- 200g feta cheese, crumbled
- 1/2 cup fresh basil, chopped
- 1 cup milk
- Salt and pepper to taste
- 1 pre-made pie crust
Instructions:
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat and sauté the leeks until they are soft, about 5-7 minutes.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Stir in the cooked leeks, feta cheese, and basil into the egg mixture.
- Place the pie crust in a pie dish and pour the leek mixture into it.
- Bake for 30-35 minutes, or until the pie is set and the crust is golden brown.
- Let the pie cool for a few minutes before serving.
