Leek Pie with Basil Recipe

Ingredients:

  • 500g leeks, chopped
  • 2 tbsp olive oil
  • 3 eggs
  • 200g feta cheese, crumbled
  • 1/2 cup fresh basil, chopped
  • 1 cup milk
  • Salt and pepper to taste
  • 1 pre-made pie crust

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat and sauté the leeks until they are soft, about 5-7 minutes.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper.
  4. Stir in the cooked leeks, feta cheese, and basil into the egg mixture.
  5. Place the pie crust in a pie dish and pour the leek mixture into it.
  6. Bake for 30-35 minutes, or until the pie is set and the crust is golden brown.
  7. Let the pie cool for a few minutes before serving.
