Ingredients:

  • 1 small pumpkin
  • 1 cup bread crumbs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp olive oil

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F
  2. Cut and prepare the pumpkin: Cut the top off the pumpkin and scoop out the seeds. Place the pumpkin on a baking sheet lined with foil.
  3. Sauté the onion and garlic: In a pan, heat the olive oil and sauté the onion and garlic until soft.
  4. Mix the stuffing: In a bowl, combine the bread crumbs, cumin, salt, pepper, sautéed onion and garlic. Mix well.
  5. Stuff the pumpkin: Fill the pumpkin with the stuffing mixture. Replace the top of the pumpkin.
  6. Bake: Bake the pumpkin in the oven for 45-50 minutes, or until the pumpkin is tender.
