Ingredients:
- 1 small pumpkin
- 1 cup bread crumbs
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp olive oil
Instructions:
- Preheat the oven: Preheat your oven to 375°F
- Cut and prepare the pumpkin: Cut the top off the pumpkin and scoop out the seeds. Place the pumpkin on a baking sheet lined with foil.
- Sauté the onion and garlic: In a pan, heat the olive oil and sauté the onion and garlic until soft.
- Mix the stuffing: In a bowl, combine the bread crumbs, cumin, salt, pepper, sautéed onion and garlic. Mix well.
- Stuff the pumpkin: Fill the pumpkin with the stuffing mixture. Replace the top of the pumpkin.
- Bake: Bake the pumpkin in the oven for 45-50 minutes, or until the pumpkin is tender.
