Ingredients:
- 2 medium zucchinis
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground coriander
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh coriander leaves for garnish
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until softened.
- Add sliced zucchinis and ground coriander, cook for 5 minutes.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender to blend the soup until smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh coriander leaves.
